I've been on a bit of a scone baking craze lately- we're talking 3 batches in 2 weeks. They're just too easy.
Scones can look fancy, especially when you see them in cafes and coffee shops (or maybe that's just me?) In any case, they are surprisingly simple to make. The ingredients needed are pretty basic, and you probably have them sitting in your cabinets right now.
What you need:
- 1 large egg
- 2 cups all purpose flour
- 1/3 cup sugar
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup heavy whipping cream or sour cream or half & half or milk (take your pick!)
- chocolate chips (1/2 cup, handful? you decide)
- 8 tablespoons of butter (1 whole stick, cold)
What you do:
- Preheat the oven to 375
- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt
- Cut butter into pieces and add in one at a time, combining ingredients by hand. Your hand is probably going to hurt. Ouch. Slowly work in all of the butter until you have achieved a coarse texture
- Toss in the chocolate chips
- Toss in the chocolate chips
- Use a small bowl to whisk the cream and the egg
- Add the cream & egg mixture into the large bowl, slowly, using your hands to combine everything, and create a ball of dough
- Take out the dough ball and place it on a floured surface, then flatten it down and cut out the scones. Sprinkle a little sugar on top of each, if you like
- Bake for 12 minutes, or until they are golden brown
Enjoy with a cup of coffee or tea, and you've got the perfect snack.
